Christmasy Gingerbread Oatmeal

- 1 cup old fashioned oats
- 2/3 cup soy milk unsweetened
- 1 cup water
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1 good pinch of each allspice, ground cloves, and kosher salt
- 1 tsp molasses
- 1 tbsp chia seeds
- 1 tbsp maple syrup
Toppings
- chopped walnuts
- dried cranberries
- cold soy milk
You may want to add another splash or two of soy milk to the oats if it looks a little to thick while cooking. I prefer my oats to be very thick and creamy, but you can thin it out with more milk or water until you reach the desired consistency.
The chia seeds are optional but they help thicken the oatmeal and some extra protein and fiber too!
You can add more maple to the oats while cooking or on top for added sweetness 👩🏻🍳
