Easy Vegan Waffle Recipe

Learn how to make easy vegan waffles for breakfast! They're crisp and buttery on the outside, and light and fluffy on the inside.

Ingredients

  • cup unsweetened soy milk
  • 2 tbsp lemon juice
  • 3 cups all purpose flour
  • cup sugar
  • tbsp baking powder
  • ¾ tsp sea salt
  • ½ tsp cinnamon or cardamom
  • 1 cup mashed bananas about 2 to 2.5 large bananas
  • 2 tsp vanilla
  • cup melted vegan butter, plus more for the waffle iron I use Earth Balance Sticks

For Serving

  • maple syrup and vegan butter

Instructions

Prep

  • Start by mashing the bananas very well with a fork, and then measure out 1 cup.
    Set aside, and then combine the soy milk and lemon juice in a bowl. Mix well and set aside to curdle.

Mix the Dry Ingredients

  • In the meantime,  mix the flour, sugar, baking powder, salt, and cinnamon in a large bowl. Tip: whisk well to combine before adding the wet ingredients. This ensures that everything is evenly distributed.

Add the Wet Ingredients

  • Add the vegan buttermilk, mashed banana, and vanilla to the flour. Then mix until there is no more visible flour, but be careful not to over-mix.
    Measure the vegan butter when it's melted for accurate measuring, then fold it into the batter. The batter will be a little thicker than pancake batter, and slightly lumpy. This is what you want!

Cook

  • Next, pre-heat your waffle iron. I typically set it to medium heat. Make sure it's warm, and then brush lightly with melted vegan butter.
    Then spoon the waffle batter into the center and cook according to the manufactures directions. Mine requires 1/2 cup of batter per waffle and has a red light that turns green when the waffles are ready.
  • Cook until golden brown, and then remove the waffle and place on a wire rack. Repeat with the remaining batter.
    Tip: you can keep the waffles warm in a 200 degree oven if desired while you finish the remaining waffles.
  • Serve warm with vegan butter and maple syrup on top! Enjoy!
