- 1¾ cup unsweetened soy milk
- 2 tbsp lemon juice
- 3 cups all purpose flour
- ⅓ cup sugar
- 1½ tbsp baking powder
- ¾ tsp sea salt
- ½ tsp cinnamon or cardamom
- 1 cup mashed bananas about 2 to 2.5 large bananas
- 2 tsp vanilla
- ⅓ cup melted vegan butter, plus more for the waffle iron I use Earth Balance Sticks
For Serving
- maple syrup and vegan butter
Prep
Start by mashing the bananas very well with a fork, and then measure out 1 cup. Set aside, and then combine the soy milk and lemon juice in a bowl. Mix well and set aside to curdle.
Mix the Dry Ingredients
In the meantime, mix the flour, sugar, baking powder, salt, and cinnamon in a large bowl. Tip: whisk well to combine before adding the wet ingredients. This ensures that everything is evenly distributed.
Add the Wet Ingredients
Add the vegan buttermilk, mashed banana, and vanilla to the flour. Then mix until there is no more visible flour, but be careful not to over-mix.Measure the vegan butter when it's melted for accurate measuring, then fold it into the batter. The batter will be a little thicker than pancake batter, and slightly lumpy. This is what you want!
