Spicy Chickpea Taquitos
Crispy, cheesy oven-baked taquitos made me with wholesome ingredients like chickpeas, sweet potatoes and chipotle salsa!

For the Filling
- 2 cans chickpeas
- 1½ cups mashed sweet potato about one large sweet potato
- 2 tbsp chipotle salsa
- 2 tsp spicy taco seasoning
- ½ tsp kosher salt I use Morton's
- ½ tsp black pepper
For the Taquitos
- 12 oz shredded vegan cheddar cheese
- 12 medium flour tortillas or corn if preferred
- 2 tsp olive oil
- vegan sour cream for serving optional
Avocado Sauce
- 2 large ripe avocados
- 1-2 tbsp fresh lime juice
- ½ tsp garlic granules
- ½ tsp kosher salt I use Morton's
Make the Filling
Then add the mashed sweet potato, salsa, taco seasoning, salt and pepper. Mix well to combine. Taste and add more salt and pepper if desired.
Assemble
Place 2 tbsp of the filling on the top third of a medium-sized tortilla. It should be the side closest to you. Then sprinkle generously with vegan cheddar cheese and tightly roll forward (roll away from you, tucking the filling in as needed as you roll). Then place fold side down on a large cookie sheet and secure with toothpicks if desired.
Make the Avocado Sauce
While the taquitos bake, make the Avocado Sauce by placing scooping the avocados in a blender or food processor. Add the lime juice, garlic granules, and salt. Blend until smooth. Taste and add more lime or salt as needed.
