Ripe tomatoes, fresh basil, and sweet corn are perfect this time of year, and on the list of dinner ideas below, you’ll find fun ways to use these seasonal ingredients!
A simple, fresh, and healthy dinner is the way to go when the weather is warm, and these easy summer recipes are exactly that.

I love vegan sandwiches and this BBQ Jackfruit Sandwich is high on my list of favorites!
This recipe is inspired by Panera Bread’s famous BBQ Smokehouse Chicken Sandwich. So my vegan version is piled high with slow cooked BBQ jackfruit, thinly sliced red onions, and melty vegan cheese.
You’re going to freak out over how delicious this is, and your dinner companions will never believe it’s 100% vegan!
Pesto Stuffed Tomatoes
If you’re always on the hunt for a good veggie dish, look no further than these delicious Pesto Stuffed Tomatoes.
This meatless meal will have you thinking you’re spending the summer in Italy, and it’s my go-to when I’m craving fresh and Summery Italian food! These Roasted Tomatoes with Pesto Chickpeas and Crispy Breadcrumbs make an excellent main course when served with a fresh green salad and some warm, crusty bread!
Pour yourself a glass of wine and take your plate outside to enjoy in the sunshine. You’ll feel like you’re in Italy in no time!
Jalapeño and Sweet Corn Pasta Salad
If you’ve been on the hunt for some new pasta salad recipes to try this summer, you’ve gotta make my Jalapeño and Sweet Corn Pasta Salad! It’s a delicious blend of roasted red peppers, sweet corn, and pickled jalapeños tossed with bowtie pasta and vegan feta cheese.

Beet + Walnut Burgers
And finally, I saved one of my favorite summer meals for last. These homemade veggie burgers are truly delicious and such a great summer dinner idea!
While they do require a little more prep work than some of the other recipes on this list, the pay off is totally worth it!
These Beet and Walnut Veggie Burgers are incredibly flavorful and the texture is just right. Not too mushy, nothing artificial, and they’re packed with plant-based protein. Serve to your vegan and vegetarian friends and they will be thrilled! But in my experience, even my non-vegan friends flip over these tasty homemade burgers!
