Hey, thanks for stopping by! I’m Nicole, better known as Nikki Vegan. I’m a recipe developer, content creator, and cookbook author with a passion for home cooking and helping people find practical ways to eat more plants, more often.

I’m here to help you eat better in your REAL life – the one you actually live…not the “ideal life” where you have unlimited time to prepare all of your meals and can do so with the very fanciest of ingredients.

I use ordinary, everyday ingredients like oats, bananas, broccoli, sweet potatoes, chickpeas, and almonds, and want to stress that a healthy vegan diet doesn’t have to be made up of pricey superfood powders or other luxury ingredients. It’s just about eating more plants and finding new ways to make them taste good!

My hope is that sharing recipes on my blog will help you get excited about what’s on your plate, and help remind you that even something as simple as sitting down to a great meal can help us see that “there’s something good in every day.”

Eating well punctuates my day with little moments of happiness and I’m excited to help you create those moments of bliss in your life too.

If you’re new to my little corner of the internet, welcome! I’m so happy you’re here. As I’m sure you’ve gathered, I am vegan and have been since 2016. To learn more about why I went vegan you can watch this YouTube video, but no, you don’t have to be vegan or vegetarian to join in on the fun here. I think we could all benefit from eating a few more plant-based meals and I’m here to help ensure that each one is delicious!

My Story

I’m first generation American, and was raised by my Norwegian Mom and Grandma in southern Florida. I started cooking when I was four years old. Back then my specialty was scrambled eggs and I would offer to make them for anyone who stepped foot inside our house!

By the age of twelve I had an extensive cookbook collection and I have vivid memories of Saturday mornings spent curled up and cozy, reading recipes from far away places like Italy or Greece in my well-loved, annotated, dogeared cookbooks. I still have many of them today.

But my love of cooking – simple, everyday cooking – really came from helping my Grandma in the kitchen. She taught me not to waste anything, to make the most of what you have, and to keep things simple; lessons that would extend far beyond the countless meals we created together. 

Now I’m a full-timer YouTuber and content creator, but before YouTube became my primary focus, I was working as a freelance writer in NYC. I’ve published roughly 100 online and print articles with topics spanning from local news to red carpet fashion.

I often wrote TV and Web reviews while working at The New York Observer, but my favorite pieces were interviews. Most memorably, the time I got to interview Gloria Steinem and Katie Couric at The Women’s Media Awards (a surreal experience that I am profoundly grateful for!)

Now I’m happy to write about my real passion: home cooking. And last December I published my first cookbook, Vegan Party Planning, which was a life-long dream come true.

Since going vegan almost ten years ago, I’ve become passionate about creating recipes that really taste good. I had to re-learn how to cook without dairy or eggs and I can’t lie, it was tricky in the beginning. I started sharing my journey on my YouTube channel and eventually obtained a certification in Plant Based Nutrition from Cornell to better understand the basics of building a well-rounded plate. My aim is to make recipes that are unique and delicious. They’re designed for people who love good food, so I hope you’ll browse this blog and see that there’s a little something for everyone. From comforting treats like these Chocolate Chip Pumpkin Cookies to these plant-based Meatball Subs that will satisfy any meat-lover!

When I’m not in the kitchen, I’m probably watching Gilmore Girls (again!) hanging out with my girlfriends, or going for a long walk. I love being outdoors and try to get a good walk in everyday. I currently live in New Jersey with my fiancé Nicholas. We got engaged in this beautiful spot in Montana, and we’re in the process of planning a wedding this September!
