One Avocado Guacamole

Can you make guacamole with just one avocado? The answer is yes, and I’ll show you how! This homemade, budget-friendly guacamole recipe is easy to make and so flavorful!
How to make guacamole using just one avocado:
We’ll start by bringing in all of the usual suspects: an avocado, some lime juice, garlic power and cilantro.
You can also add chopped tomatoes and onions but to skip the chopping and boost the flavor even more, I opt for store-bought pico de gallo. It’s basically chopped tomatoes, onions, and jalapeños so using this store bought option is a huge saver!
Then the secret ingredient: white beans (aka as cannellini beans) These creamy white beans are very mild in flavor so they’re the perfect way to add volume to our guacamole without having to use lots of avocados.
Because white beans are neutral in flavor, they take on the flavor of whatever you season them with.
I blend or mash the white beans with some water and then add them to the bowl with the other ingredients.
Inadvertent bonus? Adding white beans not only helps stretch one avocado into a whole bowl of guacamole, but it also adds beneficial nutrients like protein, fiber and iron!
Ok, but does it taste like beans??
I get the skepticism but this really is one of those magic “You gotta taste it to believe it!” kind of recipes.

ONE Avocado Guacamole Recipe
Ingredients
- 1 large avocado, very ripe
- ½ of a lime
- ½ tsp garlic granules
- ½ tsp kosher salt , plus more to taste, I use Morton's Kosher Salt
- 2 tbsp pico de gallo
- 1 15oz can cannellini beans, rinsed and drained
- 3 tbsp water
Instructions
- Mash the avocado in a mixing bowl and add the juice from half a lime. Add the garlic granules, salt, cilnatro and pico de gallo, then set the bowl aside.
- Next, combine the cannellini beans and water in a blender and blend until smooth. Add the bean mixture to the bowl with and mix well with a fork, mashing as you stir. Note: mix until the guacamole is completely green and the beans are well incoporated. Add more salt to taste then serve with toritlla chips and enjoy!
