Semi Homemade Vegan Coconut Cream Pie

You’re just three steps away from delicious, creamy, homestyle coconut cream pie because this recipe is all about taking a little help from the grocery store!
This semi homemade dessert is everything you love about coconut cream pie – buttery graham cracker crust, rich coconut vanilla custard, and silky whipped cream – all without all of the time, effort, or dairy!

Makes 2 8″ pies
- 2 store-bought graham cracker crusts (check to make sure they’re vegan, most are)
- 2 packets of vegan Instant pudding mix, like Jello
- 1/2 tsp cream of tartar
- 2 cans full fat coconut milk
- 1 can lite coconut milk
- 2 batches of coconut whipped cream
- 1/3 cup toasted coconut flakes
- In a large bowl, combine the pudding mix, coconut milks, and cream of tartar. Mix with a hand mixer for 2-3 minutes, then divide evenly between two pie shells.
- Cover and refrigerate overnight to set.
- To decorate, top with a generous amount of coconut whipped cream (recipe here) or store bought whipped topping. Sprinkle with toasted coconut flakes and serve.
TIPS FOR FINDING VEGAN PIE SHELLS
A lot of store bought pie shells are accidentally vegan Just make sure they don’t contain butter (most don’t) or honey (some do).

Make sure it doesn’t have milk powder or gelatin. Jello Instant Pudding is a great accidentally vegan option!
