Tropical Protein Overnight Oats with Warm Pineapple Sauce

Tropical Protein Overnight Oats with Warm Pineapple Sauce tastes like summer in a bowl and it’s just as easy, breezy, and effortless to whip up! Old fashioned oats are mixed with coconut milk and vanilla protein powder, chilled overnight to thicken, and in the morning, I just warm up some frozen pineapple, naturally sweetened apricot jam, and a touch of maple syrup to create a quick – and very tropical – fruit topping. Then all that’s left to do is sprinkle on a little toasted coconut and ta-daa! A vacation-style breakfast is ready in 10 minutes or less!
TASTES LIKE
The result tastes like vacation in the best way...and kind of gives me Ice Cream Sundae vibes because the oats are cool, thick, and creamy…the fruit topping is warm…and there’s even “sprinkles” of toasted coconut flakes on top. Delightful.
VEGAN PROTEIN POWDER (OPTIONAL)
Vanilla protein powder can be weird with certain fruits in my opinion. I never liked it before realizing that the choice of fruit actually makes a huge difference! The key is to work with the sweet vanilla flavor, not against it so once I discovered that tangy fruits like pineapple actually compliment the sometimes artificial tasting vanilla flavor protein powders can have, it was SO much more delicious. Best part? The combo of vanilla + pineapple + coconut tastes remarkably like some of my favorite tropical desserts and frozen drinks. Refreshing, sweet, and summery!
If you’re not into protein powder, 1/2 tsp of vanilla extract can be used instead. When I make it this way I add in a tbsp or two of chia seeds for some extra protein and calcium too!
SERVE WARM OR COLD
Sometimes I like when overnight oats is served chilled, other times I warm it up. I warm it up on the stove for 3-4 minutes with an extra splash of coconut milk or in the microwave (no added liquid) for about 1 minute and 30 seconds.
MAKE AHEAD
Don’t have time to make the pineapple sauce in the am? No worries! You can make this ahead of time and keep it in the fridge in an airtight container for about a week. Then just spoon it over your oats and breakfast will be ready in under one minute!
…side note, you’ll probably want to make a double or triple batch because this pineapple sauce is delicious with coconut yogurt and granola, spooned over vegan vanilla ice cream…or just enjoyed by the spoonful! Take my advice, and stock up!
Tropical Protein Overnight Oats with Warm Pineapple Sauce
Ingredients
Vanilla Protein Oats
- 1 cup old fashioned oats, regular or gluten free
- 2 tbsp chia seeds
- 4 tbsp vanilla protein powder, I used Ritual
- 2.5 cups flax, coconut, or almond milk, unsweetened
Warm Pineapple Sauce
- 1.5 cups pineapple chunks, I use frozen
- 1.5 tbsp apricot jam, I use the naturally sweetened kind
- 1 – 2 tsp maple syrup
- 2 tbsp water
Toppings
- toasted coconut flakes
- sunflower seeds, pumpkin seeds, and/or hemp seeds
Instructions
The night before: Prep the Oats
- Combine the oats, chia seeds, protein powder, and plant milk in a large mixing bowl. Mix well, paying careful attention to the bottom to make sure the chia seeds are well mixed. Divide between two containers, cover, and refrigerate overnight to thicken.
In the am: Make the Sauce
- Combine the pineapple, apricot jam, maple syurp, and water in a saucepan on medium heat. Stir and bring to a simmer. Reduce the heat to medium low and place a lid ajar on top. Simmer for 10 minutes, stirring occassionally until the pineapple is warm and plump and the juices have thicken slightly.
Serve
- Pour the Warm Pineapple Sauce over the overnight oats and top with a sprinkle of toasted cocout flakes and sunflower seeds for crunch. Enjoy!
