Vegan “Big Mac” in a Bowl

This “Big Mac” in a Bowl recipe is everything you love about a fast food burger but much fresher and more flavorful! Plus it’s 100% vegan!
Shredded lettuce is a must for a good fast food burger and the same is true here. Cool and crunchy all the way! Next I add not one but two vegan burger patties, the all-important combo of diced tomatoes, onions, and pickles and then it’s time for my Hamburger Bun Croutons! (aka an excellent way to use those two random hamburger buns you have lying around after last week’s bbq 😉)
The sauces are pretty key here. Ketchup, mustard, and my Vegan Burger Sauce make this bowl taste like something you picked up at a drive through in the best way!
YOU WILL NEED
- 4 Vegan Burger Patties Store-bought works well, I used Whole Food’s 365 Meatless Burgers but if you’d like to make your own, this recipe and these recipes are my go-tos.
- Hamburger Bun Croutons (recipe below)
- Shredded Vegan Cheese, I used VioLife
- Chopped tomatoes, onions, and pickles
- Vegan Burger Sauce (recipe below)
- Ketchup
- Mustard
Vegan “Big Mac” in a Bowl
Ingredients
"Big Mac" in a Bowl Ingredients
- 4-8 cooked vegan burger patties, the ones I use are thin so I use 2 per person
- 6 cups shredded lettuce like Romaine or Iceberg
- 1/3 cup shredded vegan cheddar cheese , I used VioLife
- 2 medium tomatoes , chopped
- 1/3 cup diced white onion
- chopped or sliced pickles
- ketchup and mustard
Hamburger Bun Croutons
- 2 hamburger buns
- 1/2 tsp garlic powder
- 2 big pinches kosher salt
- 2 big pinches black pepper
- 1.5 tbsp olive oil or melted vegan butter
- 2 tsp sesame seeds, optional
Vegan Burger Sauce
- 4 tbsp vegan mayo
- 2 tbsp ketchup
- 1 tbsp sweet pickle relish
- 1/2 tsp garlic powder
- 1/4 tsp kosher salt
- 2 tsp water , optional
Instructions
Make the Burger Sauce
- Combine all of the sauce ingredients except the water in a bowl and mix well. If the vegan mayo you're using is very thick you can add 1-2 tsp of water to thin it out if desired. Mix well and set aside. Tip: I sometimes do 1/2 vegan mayo, 1/2 plain unsweeteend almond milk yogurt to make this dressing and it works well too.
Hamburger Bun Croutons
- Pre-heat the oven to 400 degrees. Cut the hamburger buns into cubes and transfer to a mixing bowl. Add the olive oil and spices and then toss to coat. Transfer to a cookie sheet and toast in the oven until golden brown and crispy. About 5 minutes.
Assemble
- Divide the lettuce bwteen 4 bowls. Top with the warm burger patty, vegan cheese, tomatoes, onions, pickles, and Hamburger Bun Croutons. Drizzle generously with ketchup and mustard and top with a dollop of Vegan Burger Sauce. Enjoy!
