Vegan Chopped Salad

This Vegan Chopped Salad has a little bit of everything all in one bite! Crisp lettuce, crunchy vegetables and Dairy-Free White Bean and Sun-Dried Tomato Dressing.
Vegan Chopped Salad Ingredients
- Romaine Lettuce
- Baby Spinach
- Red Cabbage
- Carrots
- Cucumber
- Tomatoes
- Scallions
- Olives
- White Beans
- Vegan Feta Cheese
- Creamy White Bean + Sun-Dried Tomato Dressing (recipe below)
The Easiest Way to Make a Chopped Salad FAST!
If you’ve shied away from making chopped salads in the past because the thought of doing all that chopping sounded like an actual nightmare….you are not alone my friend!
While chopping veggies can sometimes be enjoyable….like when you have time, a glass of wine and a nice podcast or playlist or friend to chat with….then yeah, chopping veggies can actually be nice. Relaxing even.
But when you’re busy, hungry and need food asap, chopping the ingredients into small pieces is just NOT IT. For those days, I use a food processor to do the chopping for me.
I have this mini one I found at Target for less than $20 bucks and I also love this full-sized version that makes easy work of a job like this.
I place veggies into the food processor, pulse a few times and dump the new very finely chopped veggies into the bowl. So easy.
The chopping can also be done by hand though and it really doesn’t take very long. The trick is to make sure you chop everything as small as possible so that you get that satisfying everything-in-one-bite effect that makes chopped salads soooo delicious!

Vegan Chopped Salad with Herby White Bean and Sun-Dried Tomato Dressing
Ingredients
Salad
- 1 head Romaine Lettuce, finely chopped
- 2.5 oz baby spinach, about half of a 5oz oz container, finely chopped
- 1 cup finely chopped red cabbage
- 2 large carrots, finely chopped
- ½ English or Persian cucumber, finely chopped
- 10 cherry tomaotes , finely chopped
- 1 large scallion, finely chopped
- ⅓ cup chopped olives, black or green
- 1 can white beans (3/4 cup for salad, the rest for the dressing), drained and rinsed
- ⅓ cup vegan feta cheese
Herby White Bean + Sun-Dried Tomato Dressing
- remaining white beans
- ½ cup sun-dried tomatoes
- 1 tbsp oil from the jar of sun-dried tomatoes
- ½ clove garlic
- 2 tbsp lemon juice
- 1 tsp white rice vinegar
- 1 tsp maple syrup
- ½ cup water
- 2 big pinches of kosher salt, plus more to taste
Instructions
- Place all of the chopped salad ingredients in a large mixing bowl and set aside.
Make the Dressing
- Combine the salad dressing ingredients in a blender and blend until thick and creamy.
Mix
- Add the dressing to the salad bowl, a little at a time, and toss well. Tip: I like to kind of fluff up the salad as I mix in the dressing rather than strring it to prevent the salad from getting clumpy.
Serve
- Serve with a sprinkle of freshly cracked black pepper on top if desired and enjoy!

This is such a flavorful and beautiful salad! I always say that more people would like salads if they just chopped everything smaller. I didn’t have any vegan feta but I didn’t feel like the salad really needed it, although I’m sure it would be delicious. Next time I make this I might add some toasted nuts for a little more texture. The dressing was delicious too, but I would make sure to use sundried tomatoes packed in oil. I used just dried ones that I rehydrated and while it was still I good, I bet the oily ones would be better. I added an extra tbsp of oil. Make this salad for people who think they don’t like salads!
