All Natural Mango Syrup

Ingredients
  

  • ¼ cup mango puree directions below
  • ¼ cup maple syurp
  • ¼ tsp vanilla extract
  • 2 tbsp fresh orange juice
  • 1 pinch kosher salt

Instructions
 

To make the mango puree

  • If you're making your own mango puree, place about 1 - 1.5 cups of fresh or thawed frozen mango into a blender and blend until smooth.

To make the syrup

  • In a saucepan, combine all of the ingredeints except the kosher salt and warm on the stove over medium heat. Stir occaionally.
  • When simmering , not boiling, remove from the heat and add a pinch of salt.
  • Serve warm or chilled on pancakes, waffles, or over a scoop of vegan vanilla ice cream.

Notes

Depending on how ripe your mango is, you may want to add more mango puree or maple syrup. You can play around with the measurements until it tastes just the way you like!
Be careful not to let this boil because it can easily burn. You want it to simmer gently and then remove it from the heat. 
Pro Tip: rinse or soak the saucepan immediately after use so that it's easy to clean! Sauces like this one can be difficult to clean off if it dries on the pan.
