Crunchy salted pretzels and creamy peanut butter sandwich a thick slice of sweet frozen banana. Then it gets a half dip in dairy-free dark chocolate! Looks simple but these are out of this world delicious and completely vegan!
1tbspmelted coconut oilrefined, not virgin, works best
Instructions
Prep
Slice the bananas into 20 thick slices. Place on a lined plate or cookie sheet and freeze until solid. Tip: This can be done the night before
Melt the Chocolate
Combine the chocolate chips and coconut oil in a microwave save dish and heat in 10 second intervals, stirring between rounds, until melted and silky smooth.
Assemble the Sandwiches
Spread a thick layer of peanut butter on each pretzel, place a slice of frozen banana on top, and then close the sandwich with another pretzel. Press down gently to stick together.
Dip
Dip half of the sandwich into the now slightly cooled melted chocolate. Allow the excess chocolate to drip off and then place the sandwich on a lined plate or cookie sheet. Repeat with the remaining sandwiches and then freeze for 10 minutes to set. If there are any leftovers, store in an airtight container in the freezer for about 3-4 days. Enjoy!
