Peanut Butter Pretzel Nice Cream Sandwiches are a healthier spin on one of my all time favorite summertime treats: Ice Cream Sandwiches….but these have a sweet ‘n salty twist! Crunchy salted pretzels and creamy peanut butter sandwich a thick slice of sweet frozen banana. Then it’s dipped into a silky, dairy-free dark chocolate sauce and voilà! A bite-sized treat that everyone will love!

I know these look simple but the combo of sweet and salty, creamy and crunchy, chocolatey and peanut buttery….it’s just too good. Simple yes, but absolutely delicious and definitely worth making as soon as possible!

INGREDIENTS

  • Pretzels, I like using the square kind but the classic shape works too!
  • Nut Butter of choice, preferably natural and salted
  • Thick slices of overripe banana, overripe is key for sweetness and creating that creamy “ice cream” texture
  • Melted chocolate (recipe below)

MAKE AHEAD

I love making these on the weekend because 1. Then I have a delicious afternoon or movie night snack to enjoy that day but 2. I can store leftovers in an airtight container in the freezer to enjoy throughout the week. Perfect for those moments when I want a little something sweet after dinner or when I need a mid-day pick me up.

Peanut Butter Pretzel Nice Cream Sandwiches

Crunchy salted pretzels and creamy peanut butter sandwich a thick slice of sweet frozen banana. Then it gets a half dip in dairy-free dark chocolate! Looks simple but these are out of this world delicious and completely vegan!
Prep: 15 minutes
Freeze Time: 2 hours
Total: 2 hours 15 minutes

Ingredients 

  • 2 large bananas, ripe and spotty
  • 40 pretzels, I use the square kind
  • 3 – 4 tbsp peanut butter
  • 1 cup vegan chocolate chips
  • 1 tbsp melted coconut oil, refined, not virgin, works best

Instructions 

Prep

  • Slice the bananas into 20 thick slices. Place on a lined plate or cookie sheet and freeze until solid.
    Tip: This can be done the night before

Melt the Chocolate

  • Combine the chocolate chips and coconut oil in a microwave save dish and heat in 10 second intervals, stirring between rounds, until melted and silky smooth.

Assemble the Sandwiches

  • Spread a thick layer of peanut butter on each pretzel, place a slice of frozen banana on top, and then close the sandwich with another pretzel. Press down gently to stick together.

Dip

  • Dip half of the sandwich into the now slightly cooled melted chocolate. Allow the excess chocolate to drip off and then place the sandwich on a lined plate or cookie sheet. Repeat with the remaining sandwiches and then freeze for 10 minutes to set.
    If there are any leftovers, store in an airtight container in the freezer for about 3-4 days.
