Preheat the oven to 350 degrees and line a large cookie sheet with a baking mat or parment paper.
Mix
Place the cashews in a mixing bowl and add the chili powder and salt.Zest the lime and then add the juice. This should be roughly 2 tbsp of lime juice. Add the agave and mix well, making sure each cashew gets evenly coated in the spice blend.
Bake
Transfer the cashews to the cookie sheet and spread into an even layer. Bake for 7 minutes, then stir and bake for another 6-8 minutes.
Sprinkle
Remove from the oven and sprinkle with an extra pinch of salt while the cashews are still warm.Let the cashews cool slightly then enjoy! Cool completely before storing leftovers in an airtight container.
