How to Make Chili Lime Cashews at Home

Sweet, savory, peppery and….oil free? Yep! These easy to make roasted cashews are a delicious mix of salty, tangy, spicy, and citrusy and I seriously can’t stop snacking on them!

And with just a handful of simple ingredients, you too can enjoy these Homemade Chili Lime Cashews in less than 20 minutes.

INGREDEINTS

  • Raw, whole, unseasoned cashews work best for this recipe
  • Agave is my sweetener of choice here because it doesn’t impart additional flavor that competes with the chili lime seasoning
  • Chili Powder is actually a blend of a few different kinds of peppers, often dried ancho, poblano, and guajillo. It can be earthy, smokey, and pepper but it’s usually not too spicy.

TASTES LIKE

  • Tart and citrusy thanks to the fresh lime juice and zest
  • Mildly spicy. The chili powder pairs nicely with the fresh acidity from the lime, but it’s more of a peppery flavor than a hot, spicy flavor
  • Slightly sweet. A touch of agave helps to balance the tangy lime juice and enhances the earthy flavor of the chili powder.

METHOD

Simply add all of the ingredients to a bowl. Toss to coat then bake on a cookie sheet for 15 minutes. Then just sprinkle with salt and they’re ready to serve!

I love these chili lime cashews best when they’re warm from the oven. Can’t beat it!

SERVING SUGGESTIONS

  • Sprinkle onto salads
  • Add to your favorite stir fry or fried rice recipe
  • Chop up and sprinkle on top of Thai curries or noodle dishes
  • Mix with popcorn for a delicious movie night treat

MEAL PREP FRIENDLY

This is a great make ahead recipe. Allow the cashews to cool completely, then store in an air tight container for about a week.

Homemade Chili Lime Cashews

Ingredients 

  • 2 cups raw whole cashews
  • 1 lime
  • 1/2 tsp chili powder
  • 1/2 tsp kosher salt, I use Morton's
  • 2 tbsp light agave

Instructions 

  • Preheat the oven to 350 degrees and line a large cookie sheet with a baking mat or parment paper.

Mix

  • Place the cashews in a mixing bowl and add the chili powder and salt.
    Zest the lime and then add the juice. This should be roughly 2 tbsp of lime juice.
    Add the agave and mix well, making sure each cashew gets evenly coated in the spice blend.

Bake

  • Transfer the cashews to the cookie sheet and spread into an even layer.
    Bake for 7 minutes, then stir and bake for another 6-8 minutes.

Sprinkle

  • Remove from the oven and sprinkle with an extra pinch of salt while the cashews are still warm.
    Let the cashews cool slightly then enjoy! Cool completely before storing leftovers in an airtight container.

    I love this recipe so much. I have already made it 3 times. Instead of adding salt when they come out of the oven I add a little bit of tajin. It gave it just a little extra pop. So good!
