Roasted Beets with Whipped Feta (Dairy-Free)

Roasted Beets with Whipped Feta is one of my favorite vegetable side dish recipes. Oven-roasted beets served on a bed of dairy-free whipped feta and topped with a colorful sprinkle of fresh herbs makes for a tasty side dish recipe that everyone will love!

Roasted Beets with Whipped Feta

Whether you’re looking for vegetable side dishes for Thanksgiving or to feed a crowd, or just want something new to serve alongside your favorite weeknight dinner, this roasted beet recipe is for you.

I used to love roasted beets with goat cheese before I went vegan, so this dairy-free version is a perfect alternative. The combination of savory roasted beets with creamy feta and crunchy hazelnuts really is a match made in Heaven, and it’s really easy to make.

How to Make Roasted Beets in the Oven

Making oven roasted beets is easier than you might think. In fact, I think the process is very similar to roasting potatoes. The full instructions are on the recipe card below, but here’s some tips for success!

Step One – How to Prepare Beets

Wash and dry the beets, patting well with a clean towel to ensure that they’re very dry. This will allow the vegetables to roast properly and become very flavorful in the oven. Then trim the stems and roots, and use a vegetable peeler to peel off the skin. It’s just like peeling a potato, but if you’re concerned about your manicure, you might want to wear a pair of gloves to avoid the staining your hands with the beet juice. I usually don’t wear gloves and just wash afterwards, but you do you!

Step Two – How to Roast Beets

Slice the beets into wedges and place on a lined baking sheet. I like silicone mats like this one because it makes for easy clean up.

Drizzle with olive oil, salt, and black pepper and toss to coat. Then bake at 375 degrees for 45-50 minutes, or until fork tender.

Step Three – How to Make Whipped Feta

Make the dairy-free whipped feta – this again is super easy! Simply combine vegan feta cheese, tofu, olive oil, lemon, and the spices listed on the recipe card below in a blender or mini food processor like this one. Blend until smooth and ta-daa! Whipped feta!

Step Four – How to Serve Roasted Beets

Serve on a pretty platter. I like to start by dolloping the whipped feta on the plate, and then use the back of a spoon to create a few decorative swooshes. Next, spoon the roasted beets on top and sprinkled with toasted hazelnuts. Drizzle with olive oil and sprinkle with fresh parsley for a pop of color. Serve warm and enjoy!

Roasted Beets with Whipped Feta (Dairy-Free)

Ingredients 

  • 6-7 large beets, about 2.75 lbs without stems
  • 2 tbsp olive oil
  • ½ tsp kosher salt, I use Morton's
  • ½ tsp black pepper
  • ½ cup hazelnuts

Whipped Feta

  • 8 oz vegan feta, room temperature
  • ¼ block firm tofu, about 3.5 oz
  • 1 tsp kosher salt
  • 1 tsp dried oregano
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • 1 tbsp olive oil
  • 1 tbsp white rice vinegar
  • 2 tbsp lemon juice
  • 1 handful chopped parsley or chives

Instructions 

Prep

  • Pre-heat the oven to 375 degrees. Then chop the hazelnuts and set aside. Next, wash and dry the beets. You'll want to dry the beets very well with a clean cloth. The drier the vegetables, the better they'll roast 🙂
  • Then trim the stem and roots, and use a vegetable peeler to remove the skin. Slice each beet into 8 wedges and place on a lined cookie sheet.

Roast

  • Drizzle the beets with 2 tbsp of olive oil and season with salt and pepper. Toss to coat and bake for 45-50 minutes or until fork tender. Add the hazelnuts to the pan in the last 5 minutes of cooking.

Make the Whipped Feta

  • While the beets are roasting, combine all of the Whipped Feta ingredients in a mini processor or blender (I linked the one I use in the blog post above) and blend until smooth. Then set aside.

Serve

  • Dollop the whipped feta on a serving plate, and then use the back of a spoon to create a few decorative swooshes. Next, spoon the roasted beets and hazelnuts on top, and sprinkle with parsley. Drizzle with extra virgin olive oil if desired, and serve warm.
