Spicy Chickpea Taquitos – one of my favorite (secretly healthy) recipes to make for friends and family! These oven-baked taquitos are crispy on the outside, cheesy in the center and so fun to eat!
Make them mild or spicy depending on your preference, and enjoy with lots of my easy 4 Ingredient Avocado Sauce.

Taquitos Recipe
Instead of deep frying, these Spicy Chickpea Taquitos are baked to golden-brown perfection! The filling is made with fiber-rich chickpeas, hearty sweet potatoes and store-bought taco seasoning. I add a few spoonfuls of smokey chipotle salsa for quick flavor and then mix it all together.
Then I sprinkle on some vegan cheese to create a perfectly gooey, cheesy filling that compliments the crispy tortillas!
They’re fun to make, fun to eat, and when you drizzle my 4 Ingredient Avocado Sauce and some vegan sour cream on top, they’re pretty enough to serve at a party as a hearty and filling appetizer.
Ingredients to Make Taqutios:
You’ll only need a 5 simple ingredients to make the filling for these plant-based taquitos!
Chickpeas – Mashed chickpeas replace the shredded chicken typically found in many taquito recipes.
Sweet Potatoes – Mashed sweet potatoes compliment the spices in the taco seasoning, and creates a creamy base for the filling.
Taco Seasoning – Choose mild, medium or spicy depending on your preference. This recipe is called “Spicy Chickpea Taquitos” because I love using spicy taco mix, but you can tone it down with more mild options to suit your taste.
Chipotle Salsa – adds quick flavor in a matter of seconds!
Vegan Cheddar Cheese – I like to shred vegan cheddar cheese from a block whenever possible. It melts better than the pre-shredded cheese and tends to be more cost effective too. This Farmhouse Cheddar Block is my go to.

How to Make Homemade Vegan Taquitos
The full recipe for these oven-baked Spicy Chickpea Taquitos can be found on the recipe card below, but here’s a quick overview to give you an idea!
Start by mashing the chickpeas with a fork.
It should look like this 🙂
Then add the mashed chickpeas to a large mixing bowl and add the mashed sweet potato, salsa, taco seasoning and salt and pepper. Mix well to combine.
Place 2 tbsp of the filling on the top third of a medium-sized tortilla. It should be the side closest to you. The sprinkle generously with vegan cheddar cheese and tightly roll forward (roll away from you, tucking the filling in as needed as you roll). Then place fold side down on a large cookie sheet and secure with toothpicks if desired.
Brush the top of each taquito with olive oil and bake at 400 degrees for 15-20 minutes or until golden brown and wonderfully crisp around the edges.
While the taquitos bake, make the Avocado Sauce by placing 2 ripe avocados in a blender or food processor with fresh lime juice, garlic granules, and salt. Blend until smooth.
Serve the Spicy Chickpea Taquitos with the Avocado sauce, vegan sour cream, and fresh cilantro and enjoy!

Ingredients
For the Filling
- 2 cans chickpeas
- 1½ cups mashed sweet potato, about one large sweet potato
- 2 tbsp chipotle salsa
- 2 tsp spicy taco seasoning
- ½ tsp kosher salt, I use Morton's
- ½ tsp black pepper
For the Taquitos
- 12 oz shredded vegan cheddar cheese
- 12 medium flour tortillas , or corn if preferred
- 2 tsp olive oil
- vegan sour cream for serving , optional
Avocado Sauce
- 2 large ripe avocados
- 1-2 tbsp fresh lime juice
- ½ tsp garlic granules
- ½ tsp kosher salt, I use Morton's
Instructions
Prep
- Peel and chop one large sweet potato and steam for 15 minutes. The mash until smooth. Tip: You can also bake the sweet potato and then mash if preferred. Either way, you'll need roughly 1½ cups of mashed sweet potato for the filling.
- Next preheat the oven to 400 degrees and then drain and rinse two cans of chickpeas. Mash the chickpeas with a fork and place in a large mixing bowl.
Make the Filling
- Then add the mashed sweet potato, salsa, taco seasoning, salt and pepper. Mix well to combine. Taste and add more salt and pepper if desired.
Assemble
- Place 2 tbsp of the filling on the top third of a medium-sized tortilla. It should be the side closest to you. Then sprinkle generously with vegan cheddar cheese and tightly roll forward (roll away from you, tucking the filling in as needed as you roll). Bake
- Lightly brush the top of each taquito with olive oil and bake at 400 degrees for 15-20 minutes or until golden brown and wonderfully crisp around the edges.
Make the Avocado Sauce
- While the taquitos bake, make the Avocado Sauce by placing scooping the avocados in a blender or food processor. Add the lime juice, garlic granules, and salt. Blend until smooth. Taste and add more lime or salt as needed.
Serve
- Serve the Spicy Chickpea Taquitos with the Avocado sauce and vegan sour cream and enjoy!
Everything will work.. Use pinto or black beans for the filling. Get some decent red salsa to lubricate the tacos. Cashew yogurt + cilantro + jalepeno + SNACKSSSS = don’t kill me. love me.

These tasted great! I’m just not the biggest fan of sweet potato in savory dishes – but that’s just a personal preference! Otherwise these were tasty! I air fried mine at 375 degrees F for about 11 minutes.
Thanks Shannon! Love that you made these in the air fryer. I do that too sometimes! Also you can use regular potatoes instead of sweet potatoes if you like and add some salt and pepper to the potato mixture. The potato will add extra heartiness and a creamy texture to the filling. These were really good. I had some left over filling and wound up making up more a few days later… they were even better! I didn’t have avocados so I mixed together vegan sour cream and the chipotle salsa for a topping and it was delicious!
