These vegan-friendly Air Fried Buffalo Chicken Eggrolls are too good! Crispy and crunchy on the outside, spicy and cheesy on the inside! They’re fun to make, and even more fun to eat. Especially when dunked into my all time favorite vegan ranch!
I love making homemade eggrolls, and in the past I’ve done an oven baked version , which you can find here. After I posted that recipe, I started getting questions asking if it was possible to air fry the eggrolls and the answer is yes!
So I updated the recipe and added an extra BBQ version as a bonus in this YouTube video. Here’s how it works:
Buffalo Chicken Eggrolls Recipe
Step 1: Mix together vegan chicken, almond milk yogurt, vegan cheddar, and buffalo sauce (like this one) or Frank’s Red Hot.
Step 2: Distribute the mixture between 8 large square eggroll roll wrappers. Dip your finger in water and trace along the outside edge of each wrapper, then fold the bottom corner into the center, and press down to seal.
Then bring the left side corner into the center and press down to seal. Repeat with the right side corner and then the top corner.
Then pick up the “envelope” you’ve created and gently shape with your hands to round the shape into an eggroll. Repeat with the remaining wrappers.
Tip: Wrap firmly but not too tightly. If the wrapping is super tight, the cheesy filling is more likely to ooze out in the air fryer.
Step 3: Lightly brush both sides of each eggroll with olive oil and pay careful attention to the edges and sides. Place 4-5 eggrolls in the air fryer basket and cook for 10 minutes at 400 degrees. Then flip over each roll and cook for 10 more minutes.

How to Make a BBQ Eggroll
I love spicy food, and I think a little kick from buffalo sauce, is great – but every once in a while I crave something sweet and tangy, rather than hot. In those cases, I swap out the hot sauce for BBQ sauce (1/2 cup, plus more for serving) and keep everything else in the recipe the same.
Take this recipe to the next level:
- Add thinly sliced scallions to the filling
- For the BBQ version, try adding a handful of black beans and sweet corn for BBQ chicken pizza vibes
- Mix a little buffalo sauce into the ranch dipping sauce for the ultimate Buffalo-Ranch!
- Likewise, you can make your own BBQ Ranch by mixing a little bit of your favorite BBQ Sauce into the ranch
