Cauliflower Mashed Potatoes

This Cauliflower Mashed Potatoes recipe is a healthy spin on a classic side dish, and it’s one of my favorite ways to sneak more veggies into my day. It’s dairy-free and simple enough for a busy weeknight, but tasty enough to serve as a holiday side dish.

Ingredients to make Cauliflower Mashed Potatoes
- 4 medium Yukon Golden Potatoes – I like to use Yukon Gold Potatoes because they’re super creamy
- 2 cups cauliflower florets – fresh or frozen will work for this recipe
- 1/3 cup unsweetened almond milk – unsweetened is key!
- 2 tbsp vegan butter
- Kosher salt and pepper to taste
- Chopped chives
How to Make Cauliflower Mashed Potatoes:
Cook the veggies – Start by peeing the potatoes and cutting them into quarters. Then place the potatoes in a large pot and cover with cold water. Set the pot on the stove and bring to a soft boil. Cook until the potatoes are fork tender, which should take about 15 minutes. In a smaller pot, steam cauliflower until fork tender as well. This should take about 8 minutes.
Heat up the almond milk – combine the almond milk and vegan butter in a microwave safe dish and heat for 1 minute, or until the butter is melted and the almond milk is slightly warm. Set aside.
Mash – Drain any excess water from the potatoes and cauliflower, and then combine them in the larger pot. Return the pot to the stove with the heat off. Next, use a potato masher to roughly mash the veggies and then add the almond milk mixture, salt, and pepper. Turn the heat to low, and switch to a wooden spoon or electric hand mixer to cream the potatoes and cauliflower until light and fluffy. Garnish with topped chives on top and enjoy!
Recipe Notes:
This makes 2 large, or 4 small servings and can easily be doubled or tripled to have on hand throughout the week.
To reheat, transfer to a pot over medium high heat and add an additional splash of almond milk. Stir and warm through for about 2-3 minutes.
