I love a French toast stovetop recipe! There’s something so cozy about a relaxed weekend breakfast. Coffee’s brewing, French toast is sizzling away…maybe the windows are open. Can you picture it?

Well this morning can be yours, because this stuffed french toast recipe starts with a few simple ingredients like day-old bread, maple syrup, vanilla, and strawberries. Plus it can be made in under 30 minutes. So let’s get cooking!

Strawberry Stuffed French Toast Ingredients

Here’s what you’ll need to make this recipe:

  • Bread: Day old, slightly stale bread works best for this recipe. I like to use white or sourdough when making French Toast.
  • Vegan Butter: a bit of vegan butter in the pan prevents sticking, and creates delicious, buttery edges.
  • Soy Milk: any plant-based milk you like will work well! I prefer the ones with more protein as they make a fluffier French Toast (mimics the protein in an egg)
  • Vanilla Extract: adds warm and sweetness, which compliments the strawberries and maple syrup!
  • Cinnamon: just a touch adds so much flavor and really compliments the vanilla and maple flavors.
  • Nutritional Yeast: Seems weird to add nutritional yeast to a vegan French Toast batter, but this gives a nice creamy quality and adds a bit of depth.
  • Cornstarch: *super important ingredient* This is what makes those edges nice and crispy without having to use eggs.
  • Baking Powder: just a touch gives a light and fluffy texture.
  • Vegan Cream Cheese: I like using Kite Hill or Tofutti for this recipe. Both work well! Just make sure the cream cheese is softened, or it won’t mix properly.
  • Powdered Sugar: lightly sweetens the tangy cream cheese filling and strawberry sauce.
  • Lemon: We’ll need the zest and the fresh juice for this recipe. Lemon brightens the flavor of this recipe and adds the perfect amount of acidity that balances the sweet strawberries and warm maple syrup.
  • Strawberries: fresh sliced strawberries are the star of show! But feel free to swap raspberries or sweet peaches if you prefer!
  • Maple Syrup: for serving! I like to warm it up for a few seconds in the microwave before drizzling.

Step One: Prep

Start by making the custard: In a wide shallow bowl, combine the soy milk, cornstarch, baking powder, nutritional yeast, vanilla, and salt. Whisk for 30-40 seconds or until the cornstarch is completely dissolved and no lumps remain. Set aside.

Next make the Cream Cheese Filling by combining the softened cream cheese, powdered sugar, vanilla, and salt in a mixing bowl. Beat for 1 minute until light and fluffy, then set aside.

Step Two: Cook

Warm a large non-stick frying pan to medium heat (6 out of 10) and allow 1 tbsp of vegan butter to melt. 

While the pan warms, dip the bread into the custard and flip twice to make sure it’s well saturated.

👩🏻‍🍳Tip: I do this using a thin spatula and my trick is to slide it along the bottom of the pan as I wedge the spatula under the toast, as opposed to scooping the toast upward as I wedge the spatula underneath. This small adjustment makes it much easier to flip everything from French Toast to pancakes to burgers! Super handy trick 😊

Then transfer the soaked slices into the pan and let the bread cook for 4ish minutes or until golden brown. Then gently flip.Cook the other side for another 3-4 minutes or until golden brown.

Step Three: Assemble + Serve!

Dollop a spoonful of the Cream Cheese Filling in between each slice of French Toast. Add the strawberries, and finish with a drizzle of warm maple syrup.

Equipment

  • 1 large frying pan

Ingredients 

  • 12 large slices white or sourdough bread, day old or slightly stale
  • cup soy milk
  • tbsp cornstarch
  • 1 tbsp nutritional yeast
  • tsp baking powder
  • 1 tsp vanilla
  • ¼ tsp cinnamon
  • ¼ tsp salt
  • 2 tbsp vegan butter for the pan

Filling

  • 1 pint fresh strawberries
  • 12 oz softened vegan cream cheese, such as Kite Hill or Tofutti
  • 2 tbsp lemon juice
  • 4 tbsp powdered sugar
  • ½ tsp vanilla
  • maple syrup for serving

    *softened* cream cheese is key! It doesn't mix well when it's too cold.
  • Slice the strawberries and set aside.
