Vegan French Toast for One

Restaurant-style French Toast for one. This dairy-free, eggless, vegan French Toast smells like actual Heaven when it’s cooking and it only takes 15 minutes to prepare from start to finish!

Buttery and crispy on the outside, pillowy in the middle, and dripping with warm maple syrup, just like the kind at your favorite brunch spot. This single-serve recipe is the perfect portion for one, but it’s easy to double or triple the recipe if you’re making brunch for a crowd. Either way I recommend enjoying this Vegan French Toast while still pipping hot from the skillet. Top it with a generous drizzle maple syrup, a touch of almond butter, and a sprinkle of powdered sugar if you’re feeling festive.

Tips Making the Perfect French Toast 

  1. Any plant-based milk will work well for this recipe but my favorite is soy or oat as they’re really nice and creamy.
  2. Make sure you’re using stale or well toasted bread so that it can easily absorb the vanilla custard mixture. Fresh bread will be too soft for this recipe.
  3. One thing my Grandma taught me, and I swear I could hear her voice when I was making this recipe: make sure you have some butter or oil in the pan so that it cooks properly! I have a tendency to skimp on butter when cooking, especially since I use non-stick pans, but for this recipe, having a little butter in the pan is everything. It truly changes not just the texture of the French Toast but also the flavor and it’s the secret to creating a classic restaurant-style breakfast at home. Remember, the relatively small amount needed for this recipe is still muucccchhh less than the amount of grease they use in a restaurant kitchen, so don’t be stingy. It’s super important for this recipe.
  4. You can use any bread you like for this recipe, but large slices of country white or light multigrain bread work best. That said, I have made this recipe with cranberry walnut bread and with sourdough too. Both were fun ways to change up the flavor and texture 😊
  5. Important: Medium/ Medium High heat is important (about a 6 out of 10 is perfect) If the heat is too high, the outside will brown before the inside has enough time to cook through and you’ll end up with soggy toast. Also, if you’re making this in batches, you’ll probably want to lower the heat slightly between rounds.
  6. Make sure the pan is warm before you add the bread. This actually makes a huge difference 👩🏻‍🍳

Vegan French Toast for One

Classic Resturant-style French Toast that makes just enough for one. This dairy free, eggless French Toast recipe is like having your favorite brunch cafe right in your own kitchen and it only takes about fifteen minutes to prepare.

Ingredients 

  • ½ cup soy milk, unsweetened
  • 2 tsp cornstarch
  • ½ tsp baking powder
  • 1 tsp nutritional yeast
  • ½ tsp vanilla extract
  • 2 pinches cinnamon
  • 1 pinch sea salt
  • 2-3 slices stale or toasted bread, large slices of country white or light multigrain bread work best
  • 1-2 tbsp vegan butter or coconut oil for the pan

Instructions 

Make the Custard

  • In a wide shallow bowl, combine the soy milk, cornstarch, baking powder, nutritional yeast, vanilla, cinnamon, and salt. Whisk for 30-40 seconds or until the cornstarch is completely dissolved and no lumps remain.

Warm the Pan

  • Warm a large non-stick frying pan to medium heat (6 out of 10) and allow 1 tbsp of vegan butter to melt.
  • While the pan warms, dip the bread into the custard and flip twice to make sure it's well saturated.

Cook

  • Transfer the soaked slices into the pan and let the bread cook for 4ish minutes or until golden brown. Then gently flip. I do this using a thin spatula and my trick is to slide it along the bottom of the pan as I wedge the spatula under the toast, as opposed to scooping the toast upward as I wedge the spatula underneath. This small adjustment makes it much easier to flip everything from French Toast to pancakes to burgers! Handy trick 😊
    Cook the other side for another 4ish minutes or until golden brown.
    Serve warm with whatever you like! Some of my favorite toppings are maple syrup, berries, almond butter or vegan butter, and toasted walnuts. I also love adding a sprinkle of powdered sugar for that authentic restaurant presentation and flavor too. So good!

Notes

I sometimes add 1 tsp of orange zest and a squeeze of orange juice to the custard. So delicious with the vanilla and cinnamon but completely optional 😊

    Even though I had the wrong bread and forgot the vanilla, it was fantastic!         Hi Nikki , you said to let you know how my husband liked the French Toast. Well, he is a guy that LOVES eggs but is really trying not to eat them anymore (he used to eat 3 or 4 a couple times a week but now maybe every couple of months. It’s progress I guess.) Anyway, I always ask him to rate any new recipes I try and he is always really honest (he can’t fake if something isn’t delicious, I can always tell 😁). He said that the French Toast is a 10! I wasn’t surprised but so so happy. He said he can’t tell the difference from your version to a non vegan one and he’s willing to be the guinea pig for any more of your recipes 😁 Thanks!

    Just made this for breakfast. It turned out beautifully! You really nailed it, Nicole! It’s so crispy on the outside and custard-y on the inside. I think it’s even better than what I remember the nonvegan version tasting like. I was skeptical because I had to use a grainfree bread because of my health issues, but it wasn’t a problem at all. Btw, I left a review for your stuffed acorn squash and I am assuming you didn’t respond because I swapped out the cornbread for cauliflower rice. I hope you weren’t offended by that. I know some bloggers don’t like it when their recipes are reviewed by people who change the ingredients. They still inspire, so I don’t see the problem. Anyhoo, I am still making that for Thanksgiving, and I’ll definitely be making this French toast again and again. Thanks, Nicole!😍

  4. Recipe looks SO SO SO good, but I was wondering what if I use arrowroot starch instead of cornstarch? Corn usually upsets my stomach a bit, but I usually go through the discomfort as long as the food is good. But do you think it’ll affect the recipe or should it be fine?

    1. Good question! I haven’t tried it with arrowroot so please let me know how it goes if you give it a try. The cornstarch works to create that egg-like lacy texture on the outside of the French Toast, so that’s it’s main function in this recipe 🙂

    This was heavenly!! I made it with sourdough bread and it still turned out great, I can only imagine it would be even more delicious with a softer bread. I’m going to try a salty version next (without vanilla and cinnamon and with more nutritional yeast, salt and pepper), because that’s how we had “fried bread” in our country and I miss it so much. I’ll let you know how it goes :-*

    Made this twice. The first time I only had Dave’s bread on hand and it came out good but not perfect. I finally got some regular white bread and made it again today and it was total perfection 😊
