5 Summer Meal Prep Recipes

I like to keep things really simple in the Summertime, especially when it comes to cooking. My strategy for tasty meals with minimal effort is to meal prep a few no-fuss recipes and then enjoy the leftovers during the week ahead.

Stock your fridge with with these easy and healthy meal prep recipes from the best throw-together salads, to colorful no-cook Summer Rolls and satiating Nourish Bowls.

These make ahead recipes will have you in an easy-breezy state of mind all Summer long!

1. Vegan Chopped Salad with easy White Bean Dressing

This Vegan Chopped Salad has a little bit of everything all in one bite! Crisp lettuce and crunchy vegetables tossed with a homemade white bean and sun-dried tomato dressing.

Meal Prep Tip: store the salad and dressing separately and then dress it right before serving!

2. Black Bean, Corn and Salsa Rice Salad

This Black Bean, Corn, and Salsa Rice Salad recipe is delicious served warm or cold. It’s great on its own, served in lettuce wraps, heated up as a side dish, or when used as the rice in a burrito or taco salad.

In other words, it’s super versatile and meal prep friendly. I think you’re really going to like this one!

3. No-Cook Rainbow Summer Rolls with Homemade Dipping Sauce

Meet my favorite no-cook summer dinner recipe: Rainbow Summer Rolls! I wrap my favorite veggies and tofu in rice paper with fresh herbs like mint and basil and roll it into a log. Then I slice it in half and dunk – not dip, but generously dunk – into my easy homemade peanut sauce which tastes like fresh lime, lemongrass, ginger, and chili. 

It’s a delicious combo, and making this light and refreshing meal for dinner means you won’t have to turn on the stove or oven. Ideal for hot summer evenings!

4. Sweet Potato and Black Bean Bowls

You’ve got to try this Sweet Potato Black Bean Bowls recipe! It’s easy to make, budget friendly, plant-based, and really tasty. 

I start by simply roasting the sweet potatoes with store-bought taco seasoning and garlic. While that cooks I make the rice and prep the Vegan Cilantro Yogurt Sauce.

It’s a fresh and zingy sauce that comes together in about 1 minute and it pairs perfectly with the savory black beans and spiced sweet potatoes.

Meal Prep Tip: Double the recipe and store the rice, beans, potatoes and Cilantro Yogurt Sauce in separate large containers like these in the fridge and assemble when you’re ready to eat! When serving, I like to reheat the rice, beans and potatoes in the microwave and then mix in the veggies and sauce at the end for that oh-so-cravable “hot-cold combo” I’m always talking about.

So satisfying and quick!

5. Vegan Egg + Cheese Hash Brown Casserole

A savory veggie-packed hash brown casserole you can make in a skillet! It’s crispy on the outside, creamy on the inside and perfect for meal prep.

Meal Prep Tip: This reheats well and makes a great quick lunch or casual dinner when paired with a handful of salad greens and a slice of toast on the side. Breakfast for dinner, anyone?
