Garlic Roasted Aspargus

It’s fresh asparagus lightly tossed in olive oil and minced garlic, sprinkled with salt and pepper, and roasted to perfection. Then it’s topped with zingy lemon zest and an optional touch of red pepper flakes for some kick!

Garlic Roasted Asparagus

Fresh asparagus tossed with olive oil, minced garlic, salt, and pepper. Roasted to perfection and topped with bright lemon zest and a sprinkle of red pepper flakes!

Ingredients 

  • 2 bunches fresh asparagus
  • 3 tbsp olive oil
  • 2-3 cloves garlic
  • salt and pepper , to taste, details below

Optional

  • 2 tsp lemon zest
  • 2-3 pinches red pepper flakes

Instructions 

Prep

  • Preheat the oven to 400 degrees.
    Wash and dry the asparagus, then hold both ends of the stalk and bend until the bottom part snaps off. Disgard the bottom part and set the stalks aside.
    Mince the garlic and set that aside too.

Toss + Bake

  • Place the asparagus on a large cookie sheet lined with a baking mat or parchment if desired. Top with olive oil, minced garlic, and a sprinkle of salt and fresh black pepper. I do about 3-4 good pinches of salt and about 6 grinds of pepper, but season as desired.
    Toss to coat evenly then spread into an even layer and bake for 20-25 minutes.

Dress it up!

  • When the asparagus is ready it will be tender and lightly golden around the top and bottom of each stalk. At this point you can add the lemon zest and red pepper flakes, and use tongs to carefully toss one more time before serving. Careful tossing the asparagus because will be tender.
    Serve immediately and enjoy!
