Homemade Watermelon Rosé Italian Ice

An easy to make homemade Italian Ice or Granita made with fresh watermelon, sweet strawberries, and vegan rosé. It’s fruity and slushy and so refreshing! If you love popsicles, snow cones, or slushes you will LOVE this homemade Italian-style frozen treat!

Best part? There’s no need to have any special equipment like an ice creamer maker and it can be made ahead of time for the ultimate no-stress summer dessert. I hope you enjoy this recipe!

What is Italian Ice or Italian Granita?

It’s a flaky, fruity frozen dessert that can be made with a variety of fruits and juices. I personally love using watermelon and strawberry to compliment the red fruit, citrus and floral notes in rosé.

INGREDIENTS

  • Watermelon – fresh watermelon is the primary flavor in this recipe. Cool, refreshing, and so summery!
  • Strawberries – strawberries perfectly compliment the red fruit notes in the rosé and highlight the bright acidity that a good, dry rosé has to offer.
  • Agave – light agave provides balance and a touch of sweetness without making this dessert too sweet. You can add more or less depending on your preferences and how ripe your fruit is.
  • Vegan Rosé of choice. I love this organic and certified vegan rosé. It’s a dry, crisp, refreshing blend of Syrah and Grenache grapes and it’s my go to for this dessert. More details and discount code below!

METHOD

To make this homemade vegan Italian Ice, I simply blend the fruit, strain it to remove the seeds, and then add some agave and rosè. Freeze until solid and then scrape with a fork to create flakey, fruity, watermelony icicles that can be enjoyed by the spoonful!

MAKE IT AHEAD

This is such a no-stress recipe because you can make it ahead of time and keep it frozen until you’re ready to serve.

Tip: I wait to scrape it until just before serving for best results.

STORING LEFTOVERS

Store leftovers in an airtight container in the freezer for up to 6 months. Scrape with a fork to create the slushy icicles before serving.

Homemade Watermelon Rosé Italian Ice

Ingredients 

  • 3 cups watermelon, cut into cubes
  • 10 medium strawberries
  • 1/4 cup light agave
  • 1.5 cups vegan rosé, I used Kind of Wild's organic rosé

Instructions 

Mix

  • Add the watermelon and strawberries to a blender and puree until smooth.
    Then place a strainer on top of a large mixing bowl and pour in the fruit puree. Stir with a spoon to coax the puree through.
    Then add the agave and rosé and stir to combine. It should look like a pool of liquid pink marble!

Freeze

  • Transfer to a shallow baking dish with a lot of surface area. A 9x13in pan is a good option for this but you can use wht you have. I used a 9in pie dish in the photos above.
    Then cover and freeze until solid. About 4 hours.

Scrape

  • Once frozen, scrape the surface of the pretty pink ice to create slushy icicles.

Enjoy!

  • Scoop into bowls and enjoy!
