You can make a vegan version of Hailey Bieber’s Strawberry Glaze Skin Smoothie recipe at home with simple plant-based ingredients instead of pricey superfoods.

In fact, you probably already have most (or all) of them on hand right now!

What is Hailey Bieber’s Strawberry Skin Smoothie?

Basically, Hailey teamed up with Erewhon to create a new smoothie to coincide with the launch of her new skincare line Rhode. The pink and white smoothie is made with ingredients like collagen powder, liquid hyaluronic acid, and sea moss gel, and if you love TikTok as much as I do, you’ve probably seen TONS of Hailey Bieber fans heading over to Erewhon Market in Los Angeles to try the new Strawberry Glaze Skin Smoothie.

It’s been #trending for weeks already and judging by my recent trip to the Tonic Bar, I’d say there’s no end in sight!

What is in Erewhon’s Strawberry Glaze Skin Smoothie?

It starts with some typical smoothie ingredients like frozen strawberries, avocado, dates and almond milk.

Next come some ingredients that are meant to benefit the skin, hence the name “Skin Smoothie” It’s a mix of vanilla collagen powder, edible hyaluronic acid and sea moss gel…which, by the way, brings the total of this smoothie to about $17.

Fans says it’s worth the price but since her smoothie is made with animal-based ingredients, I set out to make a plant-based version at home (for a fraction of the price!)

How to Make Hailey Bieber’s Strawberry Skin Smoothie Recipe Vegan

Ingredients

  • Strawberries – frozen are best for texture and because it makes the smoothie colder (which weirdly makes it taste 10x better!)
  • Almond Milk – Malk or Three sisters will be most similar to the kind in Hailey’s recipe
  • Pumpkin Seeds – instead of animal-based collagen powder, I protein packed pumpkin seeds (raw). They’re rich in amino acids like glycine and proline which can also be found in collagen supplements.
  • Soft Tofu – another great source of amino acids and a great sub for hyaluronic acid. Tofu also adds a boost of protein and makes the smoothie a bit more filling!
  • Avocado – healthy fats are great for the skin and for creating a rich and creamy consistency in this smoothie!
  • Medjool Dates – rich in minerals and adds the perfect amount of natural sweetness.
  • Vanilla Extract – Hailey’s smoothie uses vanilla collagen powder so vanilla extract will duplicate that flavor.
  • Maple Syrup – for flavor, natural sweetness and depth.
  • Salt – a pinch of salt helps tie the flavors together. Bonus points if you use an idolized salt which is one of the minerals found in Sea Moss Gel!
  • Decorate the glass and add more flavor with coconut cream and strawberry puree (recipe below) You can also use a naturally sweetened strawberry jam instead of puree.
Raw pumpkin seeds are rich in amino acids and they’re a great budget-friendly swap for pricey protein powders!

Tips for Making Good Smoothies at Home

  • Blend for a bit longer than you think you need to! Don’t stop right after the ingredients liquify. Let it keep blending for 30-40 seconds to whip/emulsify the smoothie into a thick and creamy consistency.
  • Use frozen fruit and cold ingredients – this might seem obvious but it really makes a big difference. A nice, cold smoothie will be thicker and taste much better! Think cold ice cream vs warm, runny, melted ice cream. One is much more enjoyable the other!
  • Opt for Medjool Dates – Medjool dates have such a great texture for smoothies!
  • I love using this blender! It’s super powerful and it takes up less space on the counter than typical blenders.

Equipment

  • 1 Blender

Ingredients

  • cups frozen strawberries
  • ½ cup almond milk, unsweetened
  • 2 tbsp pumpkin seeds, raw
  • 1/8 block soft tofu, about 1.75oz
  • ¼ medium avocado
  • 2 Medjool dates, pitted
  • ½ tsp vanilla extract
  • 2 tsp maple syrup
  • 1 pinch sea salt

For the Glass:

  • coconut cream
  • strawberry jam or strawberry puree, recipe below

Instructions

  • Combine all of the ingredients in a blender and blend for 30-40 seconds or until very smooth and creamy.
  • For best results, decorate the glass like they do at Erewhon! It's not just pretty, it actually tastes really good too.
Simply spread some coconut cream around the inside of a tall glass using the back of a spoon. Then do the same thing with some strawberry jam or homemade strawberry puree (recipe in the notes below)
Then pour the smoothie into the glass and enjoy!

Notes

I like to use a store-bought strawberry jam for this because the ingredients are similar,  but making homemade strawberry puree is really easy too!
Strawberry Puree:
  • Simply combine 1 cup of strawberries and 1 tbsp of sugar in a saucepan.
  • Then mix together 1 tsp of cornstarch and 1 tbsp of water and add it to the pot with the strawberries
  • Simmer on medium heat until bubbly, then reduce and simmer until the strawberries are softened and the juices have thickened.
  • Remove from the heat and dd a squeeze of lemon juice. Then taste and add more sugar as needed.
  • Mash with a fork or blend if desired and enjoy!
