This easy vegan waffle recipe is seriously cozy! I grew up eating waffles every Sunday. It was a tradition in our household that made my childhood feel really special. The smell of freshly made waffles in the morning is truly wonderful, and luckily this waffle recipe only takes a few minutes to prepare, so it’s ideal for a weekend breakfast.

Pour yourself a cup of coffee, mix the batter, maybe put on an episode of Gilmore Girls, and in no time you’ll be enjoying a stack of these crispy, buttery waffles!

How Do You Make Waffles Without Eggs?

I know what you’re thinking: Do you need eggs to make waffles? The answer is no! Eggs help to bind the ingredients together and they also create lift. So eggs are used in waffle batter to make the waffle light and fluffy on the inside. But if you’re vegan or have an egg-allergy (or you just forgot to run to the store) you can absolutely make this homemade waffle recipe without eggs.

Instead of chicken’s eggs, I use mashed banana (to help bind the batter together) as well as baking powder and lemon juice (to create lift.) The result is a classic, homestyle waffle recipe that is delicious, and everyone can enjoy them for breakfast because they’re egg-free!

Ingredients to Make this Waffle Recipe

The measurements are located on the recipe card below, but here’s a quick roundup of everything you’ll need!

All-Purpose Flour – You’ll need regular flour for this waffle recipe.

Baking Powder – Creates lift for light and fluffy waffles.

Salt – Helps bring out the flavor, and balances the sweetness.

Cinnamon – I use cinnamon or cardamon in my waffles. It makes them extra delicious!

Vanilla – Another tasty ingredient that adds so much flavor to these homemade waffles.

Bananas – Mashed banana replaces the eggs that would typically be used in a waffle recipe.

Soy Milk – Opt for unsweetened soy milk for best results.

Sugar – Adds flavor but more importantly, sugar helps make the waffles crispy!

Lemon Juice – A touch of acidity helps create a light and fluffy waffle. You won’t taste the lemon juice, but it makes a big difference.

Vegan Butter – I use Earth Balance sticks. Just make sure to measure when the butter is melted for accuracy.

How To Make This Vegan Waffle Recipe

Step One – Make the Vegan Buttermilk

Making vegan buttermilk is easy. Simply combine soy milk and lemon juice and give it a stir. The lemon juice will help curdle the soy milk.

Step Two – Mix the Dry Ingredients

Next, mix the flour, sugar, baking powder, salt, and cinnamon in a big bowl. Tip: whisk well to combine before adding the wet ingredients. This ensures that everything is evenly distributed.

Step Three – Add the Wet Ingredients

Add the vegan buttermilk, mashed banana, and vanilla to the bowl. Then mix until there is no more visible flour, but be careful not to over-mix.

Measure the vegan butter when it’s melted for accurate measuring, then fold it into the batter. The batter will be thicker than pancake batter and slightly lumpy. This is what you want!

Step Four – Cook

Pre-heat your waffle iron and brush lightly with melted vegan butter. Then spoon the waffle batter into the center and cook according to the manufactures directions. Mine has a red light that turns green when the waffles are ready.

Tips for Making Homemade Waffles

How to Make Crispy Waffles

  1. Pre-heat the waffle maker. You’ll want the waffle maker to be perfectly hot before adding the batter. That direct hit if heat starts the crisping process right away, so make sure it’s hot before you get started.
  2. Likewise, you’ll want to wait about 20-30 seconds in between waffles so the waffle iron can reheat. Simply remove the waffle, close the iron, and wait 20-30 seconds before adding more batter so the next round of waffles will be crispy.
  3. I love the look of a big stack of homemade waffles, but it’s actually important to place them on a cooling rack when they’re fresh from the iron so that air can circulate underneath. This allows the waffle to crisp as it cools slightly. If you place them in a stack on plate, they will steam and soften.

RECIPE FAQs

Can I use maple syrup in the batter instead of granulated sugar?

With pancake batter yes, but for waffles I wouldn’t recommend it. The sugar helps to brown the waffles and makes them crispy so I would use granulated cane sugar for best results.

What toppings are good on vegan waffles?

1. I like the classic combo of softened vegan butter and warm maple syrup on top.

2. Fresh fruit like blueberries, banana slices, or strawberries is a nice topping too!

I also like to make PB & J waffles by topping them peanut butter and strawberry jelly instead of butter and syrup.

Ingredients 

  • cup unsweetened soy milk
  • 2 tbsp lemon juice
  • 3 cups all purpose flour
  • cup sugar
  • tbsp baking powder
  • ¾ tsp sea salt
  • ½ tsp cinnamon or cardamom
  • 1 cup mashed bananas , about 2 to 2.5 large bananas
  • 2 tsp vanilla
  • cup melted vegan butter, plus more for the waffle iron, I use Earth Balance Sticks

For Serving

  • maple syrup and vegan butter

Instructions 

Prep

  • Start by mashing the bananas very well with a fork, and then measure out 1 cup.
    Set aside, and then combine the soy milk and lemon juice in a bowl. Mix well and set aside to curdle.

Mix the Dry Ingredients

  • In the meantime,  mix the flour, sugar, baking powder, salt, and cinnamon in a large bowl. Tip: whisk well to combine before adding the wet ingredients. This ensures that everything is evenly distributed.

Add the Wet Ingredients

  • Add the vegan buttermilk, mashed banana, and vanilla to the flour. Then mix until there is no more visible flour, but be careful not to over-mix.
    Measure the vegan butter when it's melted for accurate measuring, then fold it into the batter. The batter will be a little thicker than pancake batter, and slightly lumpy. This is what you want!

Cook

  • Next, pre-heat your waffle iron. I typically set it to medium heat. Make sure it's warm, and then brush lightly with melted vegan butter.
    Then spoon the waffle batter into the center and cook according to the manufactures directions. Mine requires 1/2 cup of batter per waffle and has a red light that turns green when the waffles are ready.
  • Cook until golden brown, and then remove the waffle and place on a wire rack. Repeat with the remaining batter.
    Tip: you can keep the waffles warm in a 200 degree oven if desired while you finish the remaining waffles.
  • Serve warm with vegan butter and maple syrup on top! Enjoy!
